Lunch: Zucchini Boats

Every day of the week I find myself thinking about what I’m going to eat for lunch and dinner. My other half, well… he doesn’t think about what he’s going to eat until he’s about to have something to eat.
Usually I try to plan what I’m having for lunch the night before so I can take it with me to work but I was running a bit late this time and grabbed a couple of things from the fridge before running out the door.

Which luckily for me, turned out to be an amazingly quick, easy and delicious lunch!

Zucchini Boats
Serves 1

1 x Medium zucchini
1 x small washed potato
2 tsp pine nuts
2 tbsp The Cheese Board marinated Persian feta

Cook the potato in the microwave on a plate until soft, roughly 3-4 minutes. While this is cooking away, place the zucchini on a plate. If it doesn’t sit without falling over take a sharp knife and cut a little bit off the bottom to make a flat surface.
Cut a slit along the two sides and one at either end. Be sure not to cut too far. I found the easiest way to take the inners out was to slice the top section off and scoop it out with a small spoon.
Put the scooped out zucchini bits into a bowl and add the pine nuts and feta.
By now the potato should be done, remove it from the microwave and mash it with a fork, skin and all (the skin has all the good stuff for you apparently!) Mash it well.
Mix the potato in with zucchini, pine nuts and feta.
Now pile this into the zucchini boat, as much as you can fit! Pop the zucchini boat into the microwave for 1 minute. I took this chance to eat what wouldn’t fit in the boat! It was delicious lol.

Ding! Microwave is done and lunch is ready. Absolutely easy to prepare during my lunch break at work!

  1. I love zucchini and this looks like a great recipe. I like the idea of the boat because it can use other ingredients too. I suspect it can also go with a cheeses like cheddar and parmesan in the oven to give it a golden brown too :)

    I know they're really cheap from the local grocers around here too. A pack of 6 for $2!

    I think a nice cheese like chedder would go well too, and definitely in the oven it would be perfect and crisp as well as melty.
